1 t. salt
1 1/2 t. dried mint
1/2 t. red pepper
1 – 9 lb. (bone in) leg of lamb
2 medium onions, chopped
3 c. dry white wine
1/2 c. olive oil
1/2 c. Dijon mustard
4 cloves garlic, chopped
2 T. Worcestershire sauce
Combine salt, mint and red pepper in a small bowl. Rub into lamb. Place onion in the center of a lightly greased roasting pan; place lamb on top of onion. Combine wine, olive oil, mustard, garlic and Worcestershire sauce. Pour over lamb.
Bake at 325 degrees for two hours 15 minutes. Baste lamb with pan juices a couple of times during the roasting.
