1 c. sugar
2 eggs
4 ripened bananas
1 t. vanilla
1 3/4 c. flour
1 1/2 t. baking powder
1 t. baking soda
1/8 t. salt
1 lb. powdered sugar
1 t. rum extract (This brand is good.)
1 stick butter, melted
2 T. dark brown sugar
2 T. milk (may add a bit more for consistency)
optional (1 c. chopped pecans)
Blend eggs with a wire whisk. Add sugar and vanilla. Blend in bananas with a hand blender or mixer. Slowly add flour, baking powder, baking soda, and salt. May add pecans, as well.
Spoon into pre-greased and floured muffin pans.
Bake at 350 for 20-25 minutes or until golden brown.
For icing: Mix together brown sugar and powdered sugar with rum flavoring and butter. Slowly stir in milk. Ice each cupcake generously.
This makes a wonderful Valentine’s Day dessert! Perhaps add a heart pick to stick in each one!
