1/2 c. corn meal
1/2 c. flour
1 1/2 t. salt
1 1/2 t. chili powder (may substitute 1 t. basil)
1/2 t. oregano
1/4 t. pepper
2-3 1/2 lb. chicken fryer with skin(or drumsticks, wings, thighs or breasts), thawed
1/2 c. milk
1/3 c. butter, melted
2 T. olive oil (or spray)
Spray a large baking dish with oil. Set aside.
Combine corn meal, flour and spices in a large bowl. Pour milk in a medium bowl. Dip chicken pieces in milk to coat both sides, then dip both sides in spice mixture. Place each piece skin-side up in baking dish. When complete, drizzle butter over the top.
Bake at 375 degrees for one hour.
