1 1/2 c. flour
1 c. sugar
1/3 c. baking cocoa
1 t. baking soda
1/2 t. salt
2 eggs
1/2 c. cold brewed coffee
1/2 c. vegetable oil
3 t. cider vinegar
3 t. vanilla extract
Mocha Frosting
3 T. semi-sweet chocolate chips
2 T. milk chocolate chips
1/3 c. butter, softened
2 c. powdered sugar
1-2 T/ brewed coffee
1/2 c. chocolate sprinkles
In a small mixing bowl, combine the flour, sugar, cocoa, baking soda and salt. In a small bowl, whisk the eggs, coffee, oil, vinegar and vanilla. Add to dry ingredients and mix well.
Fill paper-lined muffin pans 3/4 full with batter.
Bake at 350 degrees for 20-25 minutes.
Cool for 10 minutes before frosting.
Mocha Frosting:
Melt chips in a glass bowl for 2-3 minutes. Stir until smooth and add butter, powdered sugar and coffee. Pipe frosting onto cupcakes, and top with sprinkles (gently press them down).
