5 egg yolks
5 T. sugar
5 T. cream
1 T. cognac (opt.)
1/4 t. cinnamon
1/4 t. cardamom
1 egg white
1 1/2 c. flour
1 1/2 c. vegetable oil
1/2 c. powdered sugar
Beat egg yolks and sugar together in a large bowl. Whisk in cream and blend until fluffy. Stir in cognac and spices. In a separate small bowl, beat the egg white until stiff. Fold into cream mixture. Gently add in 1 c. flour. Let stand, covered, in refrigerator overnight.
Next morning, using 1/2 c. flour, roll dough to 1/2 inch in thickness and cut into wedges or with cookie cutter.
Fry in 350 degree oil until golden. Place on paper towel to absorb oil. Sprinkle with powdered sugar, if desired.
