7 slices bacon
1/4 c. onion, chopped
1 T. flour
1 T. sugar
3/4 t. salt
dash of pepper
1/4 c. chopped celery
1/4 c. vinegar
3 c. potatoes, sliced and cooked
1 T. parsley
1/2 c. water
Cook bacon until crisp; crumble.
Cook onion and celery until tender. Blend in flour, sugar, salt and dash of pepper. Add vinegar and 1/2 c. water. Cook over medium heat and stir until thick. Add bacon and potatoes. Heath thoroughly.
Serves 4.
