Ingredients:
3 lbs. carrots
1 c. sugar
1 T. baking powder
1 T. vanilla
3/4 c. flour
6 eggs
1 1/2 sticks margarine, melted
Cooking Instructions
Boil carrots until extra soft (45 minutes-1 hour).
Drain well. While carrots are warm, add sugar, baking powder, and vanilla. Whip mixture until smooth.
Add flour and mix well.
Beat eggs in separate container and add to mixture.
Add melted margarine and blend well.
Pour into greased 11 X 14 inch baking dish.
Bake at 350 degrees for 1 hour (top will be golden brown)
