Turkey Pot Pie

1/4 c. onion, chopped
1/2 c. celery, chopped
1/4 c. butter
2 c. plus 1/3 c. Bisquick baking mix, divided
2 T. shortening
3 c. milk
1 t. salt
1/2 t. pepper
2 c. chicken broth
2/3 c. light cream
4 c. turkey, cooked and diced
1 T. pimiento
1 t. Worcestershire sauce
scant amount flour for making crust

Grease a 9 1/2 X 13 inch baking dish. In a large frying pan melt butter. Sauté onions and celery over medium heat for 5 minutes. Combine 1/3 c. Bisquick with chicken broth in a separate container. Slowly stir into onion and celery mixture. Add turkey, salt, pepper, pimiento, Worcestershire sauce. Cook for 5 minutes over medium heat. Slowly blend cream into this mixture. Stir well and then pour into baking dish. Put baking dish into oven, as it preheats to keep it hot while you prepare the crust.

In a large bowl, combine 2 c. Bisquick, 2 T. shortening and 3 c. milk. Blend until a soft dough is formed. On a floured surface knead dough for about 2 minutes. Roll dough into an 9 1/2 X 13 inch rectangle, cutting three 1 inch slits in center. Place over hot filling.

Bake for 15 minutes at 450 degrees. From my dear friend, Dana’s Mom, Loretta.

Why the NAME?

I believe that Martha in the Bible learned to sit at Jesus’ feet by the time she spoke that Jesus is the Resurrection and the Life when Lazarus lay in the tomb. She was still very much Martha, though. So she learned to put the pre in preparation in her home.
