Calzone

2 T. cornmeal
1 lb. sweet or hot Italian sausage links, crumbled and cooked
2 c. your favorite marinara sauce (ours is this one)
1/4 t. hot crushed red pepper flakes
1/2 t. crushed fennel (opt.)
2 c. grated mozzarella
1/4 c. grated Parmesan
1 Recipe for Pizza Dough (Bread Machine or Traditional)

Make pizza dough according to directions. Also make marinara sauce according to directions. Divide pizza dough in half and roll them into two 8 inch circles. Place them on a baking sheet and sprinkle with cornmeal.

In a sauce pan over medium heat, blend together 1 cup marinara, sausage, hot pepper flakes and fennel. Cook for 5 minutes.

Cover half of each dough circle with mozzarella cheese, leaving a 1/2 inch border around the edge. Top with divided meat sauce. Sprinkle with Parmesan. Fold dough over to make a turnover and press edges with a fork to seal.

Bake in 425 degree oven for 20 minutes or until a deep, golden brown. Serve with additional sauce.

Bread Machine Pizza Dough

1 t. sugar
2 t. salt
1/4 c. plus 1 T. cornmeal
3 T. wheat flour
3 c. white flour
1 1/4 c. warm water (105 degrees)
2 T. olive oil
1 T. yeast

Pour water into bread maker. Then add olive oil, flours, cornmeal, sugar and salt. Poke a hole in the dry mixture with your finger and add yeast there. Set bread machine to dough cycle.

When complete, flour a surface and shape crust for thin or thick crusted pizza–also makes wonderful calzones. Add toppings desired and cook at 425 degrees for 15-20 minutes.
