Creamy Pumpkin Soup

1 medium onion, chopped
2 cans or 29 oz. freshly made chicken broth
2 c. russet potatoes, peeled and sliced
2 1/2 c. milk
1/2 t. salt
1 c. sour cream
2 T. butter
2 c. cooked or canned pumpkin
1/2 t. ground nutmeg
1/4 t. pepper
1 T. fresh parsley, chopped
3 bacon strips, cooked, drained and crumbled

In a large stock pot, sauté onion in melted butter on medium heat until tender. Add the broth, potatoes and pumpkin. Cook on medium high until the potatoes are tender (about 20 minutes). Remove from heat and cool. Purée the whole mixture until smooth.

Cook the mixture in the stock pot on medium low heat and slowly add, milk, nutmeg, salt and pepper until all is heated through. Meanwhile, combine parsley with sour cream in a separate bowl.

Spoon soup into bowls; top each with a dollop of the sour cream mixture and sprinkle with bacon. Makes 6 servings. For a group, can serve this soup from a hollowed out and top cut out pumpkin–very festive!

Corn Sausage Chowder

1 lb. Jimmy Dean maple sausage
1 T. butter
1/2 c. onion, chopped
1/2 c. green bell pepper, chopped
3 1/2 c. milk
1/3 c. flour
1/2 t. garlic
1 t. salt
2 – 15 oz. cans mexicorn (yellow corn with red and green peppers)
1 1/4 c. sharp cheddar cheese, finely grated

Brown sausage and drain. Sauté onion and bell pepper in butter over medium heat in a large stock pot for 5 minutes or until onions are translucent. Gradually add in milk mixed with flour, stirring constantly over medium heat. Add in corn, sausage and salt. Stir together and heat for another 5 minutes. Gradually blend in cheese and melt over low heat until just melted.

Can add bacon, green onions and more cheese as toppings for each bowl of soup.

Spiced Apples

4 Gala apples, peeled and cored
1/2 c. brown sugar
1 t. cinnamon (my favorite cinnamon!)
1/4 t. nutmeg
2 T. water
1 T. butter

Mix together brown sugar, cinnamon and nutmeg in a small bowl. In a casserole dish coat apples with brown sugar mixture. Pour water over the top and place pats of butter around the dish. Cover and microwave for 8 minutes (OR Cook all in a medium pot on the stove on medium high heat with the lid on for 10 minutes).

Cocktail Quiches

Pastry Shells:
1/2 c. butter, softened
4 oz. cream cheese, softened
1 c. plus 2 T. flour
1 1/2 T. sesame seeds
1/4 t. salt

Filling:
1 c. sharp cheddar cheese, finely grated
4 T. green onions, including the tops
2 T. sweet red peppers, finely chopped
3 eggs, beaten
3/4 c. half and half
1/2 t. salt
1/4 t. freshly ground pepper
2 T. Parmesan cheese
dash of chipotle Tabasco sauce

Pastry:
Combine butter and cream cheese and beat until smooth. Stir in flour sesame seeds and salt. Cover and refrigerate for 1 hour.

Shape into 36 1 inch balls. Place in lightly greased mini-muffin pan. Shape each into a shell.

Filling: Combine cheddar, Parmesan, green onions and red peppers. Spoon evenly into the bottom of the shells. Combine eggs, half and half, salt, pepper and Tabasco. Pour evenly over the top of the first combination in each shell–filling three-fourths full.

Bake at 350 degrees for 30 – 35 minutes or until set.
